Chicken
1 chicken breast
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon oregano
Juice of half a lemon
Salt and pepper

1 cup cooked couscous or quinoa
1 handful fresh spinach or mixed greens
1 quarter cup diced cucumbers
1 quarter cup cherry tomatoes, halved
2 tablespoons feta
1 tablespoon chopped red onion
2 tablespoons tzatziki
Fresh parsley
Season chicken with olive oil, garlic powder, oregano, lemon, salt, and pepper.
Cook in a skillet over medium heat for 5 to 6 minutes per side until golden and fully cooked. Slice.
Add couscous or quinoa to a bowl. Top with spinach, cucumbers, tomatoes, red onion, and feta.
Add sliced chicken on top.
Finish with tzatziki and fresh parsley.
